About me
Sarah Charles came to love classic cocktails working at Weather Up Brooklyn for almost a decade. She worked her way up from server to bartender exploring the breath of the classics and the Milk and Honey compendium. During the pandemic, she took over managing Weather Up, and seized this moment to improve standards, expand profit margins, and double sales of pre-pandemic years. In early 2022, she made the jump to fine dining, becoming the Head Bartender at the Michelin Starred, Oxalis. It is here that her scope of what drinks can be exploded, inspiring her to a more elegant cocktail and nonalcoholic beverage experience. Sarah has organized and worked bars for a variety of specialty events including weddings, concerts, birthday bashes, and RTD canned cocktail hangouts. In 2024 she made the jump to Asheville, NC and became part of the Flat Iron Hotel team as their Food and Beverage Director. Here she continues to pursue her passion for hospitality, hyper seasonal fare, and elevated beverage experiences in the three outlets in the space. Sarah remains a part of the national beverage scene as a consultant for Maverick Theory, where she brings the polish, precision, and positivity to make any bar experience spectacular.
